Cut chicken breast into strips, toss with oil, salt, pepper, and spice mix. Fry in pan on medium-high heat until golden brown (approx. 6-8 minutes).

Tip: Don't move meat continuously! Let it cook for 1-2 minutes to get a crust (Maillard reaction), so it stays juicy inside.

Meanwhile, cut lettuce into strips, tomato and cucumber into cubes. Mix mayonnaise with mustard.

Tip: It's worth cutting out the tomato's seedy middle so it doesn't soak the tortilla.

Warm tortilla wraps one by one (dry pan 10 sec per side, or microwave).

Tip: Heating activates oils in the dough, making it more pliable so it doesn't break when rolling.

Pile lettuce in centre of wrap, vegetables on top, then warm meat and cheese. Drizzle with sauce.

Tip: Sprinkling cheese on warm meat melts it slightly, adding extra flavour and texture.

Fold bottom of tortilla over filling, then fold in two sides, and roll up tight.

Tip: Tight rolling keeps the wrap together whilst eating.

Recipe FAQ

Why does the tortilla break when rolling?
Because it is cold and dry. Definitely warm it through for 10 seconds in a microwave or dry pan before use so the fat in it softens and the dough becomes flexible.
Sauce leaks out, what to do?
Don't take sauce to the edge of the dough! Leave a 2-3 cm rim empty, and fold the bottom up when rolling.
