Immediately stir the honey, salt, and half of the cinnamon into the hot coffee.

Heat the milk to approx. 60-65°C (when it starts steaming but not boiling) and froth until creamy.

Tip: At too high a temperature, the sweetness of the milk is lost and it tastes 'cooked' due to the breakdown of lactose [Start of Maillard reaction].

Pour the frothed milk onto the spiced coffee base. Pour the milk slowly to keep the foam on top.

Why didn't the milk froth?
The milk might have been too hot (proteins precipitated), or the fat content was too low. 'Barista' plant milks or whole cow's milk work best.
