- Why did the honey burn?
- You added it on too high a flame. Honey sugars caramelise and burn quickly. Turn the heat down at the end!
- What can I replace chicken breast with?
- With chicken thigh fillet the result will be even juicier.
Honey soy chicken
This dish builds on the balance of umami (the fifth taste) and sweet. The salty depth of soy sauce and the floral sweetness of honey reduce under heat to a thick, sticky glaze coating the roasted chicken bites perfectly. Quick, spectacular and addictive.

Instructions
1
✓
Dice the chicken, lightly salt and pepper. Crush the garlic, grate the ginger.
Tip: Pat chicken dry before frying so it browns, not boils.
2
✓
Heat the oil in the pan and fry the chicken cubes until golden brown.
Tip: Don't move constantly! Let it get a crust on one side before turning.
3
✓
Throw in the ginger and garlic, fry for half a minute until fragrant.
Tip: Careful, garlic burns quickly and becomes bitter.
4
✓
Pour over the soy sauce and honey. Boil together over medium heat until the sauce thickens and coats the meat.
Tip: During reduction water evaporates, leaving a shiny glaze [concentration].
5
✓
Remove from heat, sprinkle with sesame seeds. Serve with steamed rice.
Tip: You can toast sesame seeds in a dry pan beforehand for extra flavour.
