Finely chop the onion, clean and chop the green beans. Sauté the onion in oil until translucent, adding the crushed garlic at the end.
Tip: Fry the garlic for only a few moments to release essential oils, but do not burn it.

Remove from heat, stir in the paprika, then immediately add the green beans and enough water to just cover. Salt and cook covered until tender (approx. 15-20 minutes).
Tip: Paprika dissolves in fat but is heat sensitive. Adding water stops it browning further.

Prepare the thickening: mix the sour cream, milk, and flour in a small bowl until lump-free.
Tip: Use a whisk for a smooth texture.

Tempering: ladle some hot cooking liquid into the thickening mixture, stir, then pour this back into the saucepan whilst stirring continuously.
Tip: This warms up the sour cream so the proteins don't shock and curdle in the hot soup (it won't become 'spotty').

Boil together for 1-2 minutes to cook the flour and thicken. Finally, stir in the fresh chopped dill and season with a little sugar or vinegar.
