Cut the beef into thin slices. Prepare the marinade: mix the soya sauce with the sugar until the sugar dissolves. Add the sesame oil, crushed garlic, grated ginger and (little) chilli.

Tip: Dissolving the sugar is important so it coats the meat evenly.

Marinate the meat for 30 minutes in the fridge.

Slice the onion. Toast the sesame seeds in a dry pan until golden brown, then set aside.

Tip: Careful, sesame seeds burn in moments!

Heat oil in the pan. Throw in the onion, fry for 2 minutes, then add the meat with the marinade.

Tip: The onion flavours the oil (aromatisation).

Fry the meat on high heat, stirring often, until the liquid evaporates and the meat browns nicely and caramelises.

Tip: The reaction of amino acids in soya sauce and sugar gives the deep brown colour and full flavour (Maillard reaction).

When done, remove from heat and toss with half the toasted sesame seeds.

Add a little water and a little more sugar or grated pear/apple to balance it.
What soya sauce should I use?
Korean soya sauce is best, but a good quality Japanese soya sauce will do. Dark soya sauce gives a richer colour.
