Siberian style game & mushroom pizza

The flavours of the taiga on a pizza. The deep, gamey aroma of venison or boar and the earthy taste of forest mushrooms make a perfect pair. This is not a light summer pizza, but a substantial, warming dish for colder days. A soured cream base works better here than tomato, allowing the taste of the game to prevail.

Instructions

1

Preheat the oven to 220°C.

Tip: High heat is needed for the dough.
2

Clean the mushrooms and slice thinly. Cut the onion into rings.

Tip: Do not wash the mushrooms in plenty of water as they will absorb it.
3

Spread the dough with the salted, peppered soured cream.

Tip: The richness of the soured cream harmonises with the dryness of the game meat.
4

Scatter over the mushrooms and onion, then lay the thinly sliced game meat on top.

Tip: If the mushrooms are raw, cut them very thinly so they cook through. If thicker, sauté them first.
5

Sprinkle with cheese and fresh thyme.

Tip: Thyme is one of the best herbs for mushrooms and game.
6

Bake for 12-15 minutes until golden brown.

Tip: When the cheese has browned and the edge of the dough is crisp, it is ready.

Recipe FAQ

I don't have game meat, what should I use?
Good quality smoked sausage or beef will do, though the taste will be different.
What mushrooms should I buy?
Brown chestnut mushrooms are available and tastier than white, but porcini is the real deal.
