Spicy Roasted Chicken Thighs
The secret to the perfect roast chicken thigh lies in the contrast between skin and meat. The skin must dry out completely so the fat can render and turn into a crispy wafer. Meanwhile, protected by the bone, the juices remain in the meat. If the skin stays wet before baking, it will never be crispy, only reminiscent of steamed rubber.

Preheat the oven to 200°C. Wipe the chicken thighs completely dry with kitchen paper. This is the most important step!
Tip: The oven must first boil off the water on the skin (100°C), during which the meat only steams. Browning (Maillard reaction) only starts after this, at a higher temperature.

Mix the oil, lemon juice, crushed garlic, smoked paprika, cayenne pepper, and salt in a bowl.
Tip: The oil conducts heat and helps release the flavours of the spices.

Loosen the skin on the meat and rub most of the spicy marinade UNDER the skin, directly onto the meat.
Tip: Paprika has a high sugar content, so it would easily burn on top of the skin at high heat, giving a bitter taste.

Brush the top of the skin thinly with just salted oil (or the remaining marinade if you don't mind it darkening).
Tip: The skin needs fat and salt for crispiness.

Roast in the baking tray for 35-40 minutes until the skin is dark golden brown and crispy.
Tip: Do not overcrowd the tray! If the thighs touch, steam forms between them, and they steam instead of roast.
