Tahini poké bowl

Tahini (sesame paste) is the peanut butter of the Middle East. Thick, creamy, and intensely sesame-flavoured. In this fusion recipe, we swap the classic soy sauce dressing for it, resulting in a richer, fuller flavour profile that forms a perfect contrast with the fresh, crunchy vegetables.

Instructions

1

Cook and season the rice.

Tip: Lukewarm rice absorbs flavours better.
2

Prepare the dressing: mix the tahini with the soy sauce, honey, and a little lime juice. If too thick, loosen with a little water until pourable.

Tip: The emulsion (mixing of fat and water) creates a creamy consistency.
3

Slice the vegetables and assemble the bowl.

Tip: Always cut the avocado last so it stays fresh.
4

Drizzle the tahini dressing generously over the top.

Tip: This dressing is very rich and intense, so a little goes a long way.

Recipe FAQ

What is tahini?
A paste made from toasted and ground sesame seeds. Available in health food shops or larger supermarkets.
What if the dressing is too thick?
When tahini comes into contact with water, it thickens at first, then thins out. Add water a spoonful at a time until you reach the desired consistency.
