BBQ grilled spicy soya strips
Soya strips (textured soya protein) are neutral in taste themselves, but their structure is like a sponge: capable of absorbing any marinade. When prepared correctly on the grill, you get a fibrous texture reminiscent of meat, made truly distinctive by the smoky-spicy sauce.

Soak the soya strips in hot vegetable stock for 15-20 minutes until completely softened.
Tip: The stock gives it flavour right from the start instead of plain water.

Drain and squeeze the water out THOROUGHLY. Use your palm or a tea towel.
Tip: This is the most important step! If it stays wet, it won't brown, it will only steam and become spongy.

Mix the marinade: soy sauce, garlic, oil, paprika, cayenne pepper.
Tip: The oil helps make the soya surface crisp.

Toss the squeezed soya in the marinade and let stand for 10 minutes.
Tip: The 'sponge' now absorbs the flavoured oil in place of the water.

Place on a grill tray or fine grate. Grill for 8-10 minutes, turning frequently, until the edges brown.
Tip: The grill tray prevents the thin strips falling into the embers.

Mix the BBQ sauce with the honey. Brush the grilling strips with it in the last minute.
Tip: The goal now is just glazing, do not burn it.
