Mix the flour, baking powder, sugar, and salt in a bowl.

Tip: Batters with baking powder ('quick breads') do not require proving; the chemical reaction produces gas immediately upon baking.

Mix the egg with the milk and melted butter, then pour into the flour. Knead into a soft but not sticky dough.

Tip: Only knead until it comes together. Over-kneading strengthens the gluten too much, making the doughnut tough and chewy.

On a floured surface, flatten the dough to a finger's thickness and cut into squares or cut out circles.

Tip: Thickness is important: if too thin, it dries out; if too thick, it won't cook through.

Heat the oil and fry the dough pieces until golden brown on both sides (approx. 3-4 minutes per side).

Tip: The oil is ready when small bubbles rise around the handle of a wooden spoon inserted into it.

Why did the centre remain raw?
The oil was too hot. The outside burnt before the heat could reach the inside. Fry at a lower temperature, more slowly.
