Chicken gyros

Gyros (meaning 'turn') is traditionally roasted on a vertical spit, but you can achieve that characteristic flavour at home in a frying pan too. The secret lies in the marinade: the spices dissolve in the oil and permeate the meat, whilst the yoghurt-acidic medium (if included in the marinade) tenderises the fibres. The contrast between fresh, crunchy vegetables and warm meat makes it unbeatable.

Cut the chicken into thin strips. Mix with the olive oil and the spice mix. Place in the fridge for at least 30 minutes.

Tip: The oil dissolves the aromatics, allowing them to penetrate deeper into the meat fibres.

Prepare the sauce (Tzatziki style): mix the yoghurt with the crushed garlic, lemon juice, a pinch of salt and (optionally) grated, squeezed cucumber.

Tip: The flavour of the garlic intensifies as it sits!

Chop the vegetables: slice the onion thinly, and cut the tomatoes and pepper into cubes or strips.

Tip: Red onion is less pungent and has a nicer colour.

Heat a frying pan (no fat needed as it's in the marinade) and fry the chicken strips until red and crispy.

Tip: Fry over a high heat so it sears (roasts) rather than steams in its own juices.

Toast the pittas in a pan or toaster, cut off the corner (or open them up), and fill with the meat, vegetables and sauce.

Tip: Warm pitta is more flexible and won't break whilst filling.
