Appam is one of South India's most beloved breakfasts, a pancake made from fermented rice flour and coconut milk. Mash the banana to a pulp with a fork or blend it.

Tip: The riper the banana, the higher its sugar content and stronger the aroma.

In a bowl mix rice flour, salt, sugar, and baking powder. Add the banana pulp and coconut milk.

Tip: Rice flour contains no gluten, so no fear of over-mixing (texture won't become rubbery).

Mix dough until smooth. Consistency should be thicker than pancake batter, but runny. Let rest for 20-30 minutes.

Tip: During resting rice particles absorb moisture, so the batter becomes silkier when frying.

Heat a little butter in the pan over medium heat. Pour a ladleful of batter in the centre. Do not rotate the pan, leave it to remain a thicker disc.

Tip: The centre of appam is traditionally thick and soft, while the edge is thin.

Fry until bubbles appear on top and bottom becomes golden brown. Then flip and fry the other side for 1 minute.

Tip: Baking powder develops carbon dioxide under heat, these bubbles make the dough light.

Serve warm, drizzled with honey.

Tip: Honey absorbs better into the pores of warm dough.

Why did it stick?
The pan wasn't hot enough, or there was too little fat. Sugary doughs are more prone to sticking.
Can I use wheat flour?
The essence of appam is the gluten-free, light structure of rice flour. With wheat flour you'd get a heavy, dense pancake.
