In a bowl mix rice flour, salt, sugar, and baking powder. Add the banana pulp and coconut milk.
Tip: Rice flour contains no gluten, so no fear of over-mixing (texture won't become rubbery).

Mix dough until smooth. Consistency should be thicker than pancake batter, but runny. Let rest for 20-30 minutes.
Tip: During resting rice particles absorb moisture, so the batter becomes silkier when frying.

Heat a little butter in the pan over medium heat. Pour a ladleful of batter in the centre. Do not rotate the pan, leave it to remain a thicker disc.
Tip: The centre of appam is traditionally thick and soft, while the edge is thin.
