Making Tzatziki: Grate the cucumber, salt lightly, and let stand for 10 minutes. Then squeeze out the water with your hands or in a clean tea towel.

Tip: If you leave the water in, it will dilute the yoghurt and make the pita soggy.

Mix the squeezed cucumber into the yoghurt, add 2 cloves of crushed garlic, 1 tbsp olive oil, and the lemon juice. Refrigerate.

Tip: The garlic flavour intensifies over time in the yoghurt; it's worth making in advance.

Cut the chicken into thin strips. Mix with 3 tbsp olive oil and the spice mix. Let sit for 20 minutes.

Tip: Oily marinade transfers flavours better than dry seasoning.

Heat the frying pan until very hot. Cook the meat in batches so it sears rather than steams. We want nice red, crispy edges.

Tip: The 'gyros experience' comes from crispy shavings of meat.

Slice the vegetables (tomato, onion). Warm the pitas (in oven or pan) so they are soft and pliable.

Tip: Cold pita breaks and is dry. Warming 'revives' the starch.

Why is my tzatziki watery?
Because you didn't squeeze the cucumber enough. Cucumber is 96% water, which salt draws out. This must be removed.
How do I season if I don't have gyros mix?
A mix of oregano, garlic, cumin, paprika, a little cinnamon, and salt is perfect.
