Cinnamon & ginger latte
More than just a coffee: the pungent warmth of ginger (gingerol) stimulates circulation, whilst the scent of cinnamon soothes. Frothing the milk locks these aromas into the bubbles.

Heat the milk with the grated ginger and cinnamon, let it stand for 2 minutes, then strain.
Tip: Spice oils release better in warm milk than if mixed in cold.

Froth the spiced milk, then pour over the fresh coffee.
Tip: Proteins in milk form the most stable foam around 60-65°C. Do not overheat!
