Classic Espresso Martini

This cocktail is the marriage of caffeine and alcohol, crowned by the creamy foam on top. The foam is formed not from cream, but from the oils and proteins in the coffee under vigorous shaking. It is important that the coffee is strong and fresh, as this provides the backbone of the drink alongside the neutrality of the vodka.

Ingredients

Equipment Needed

  • Shaker
  • Chilled Martini glass (Coupe)
  • Espresso machine or Moka pot
  • Strainer

Instructions

1

Brew the espresso.

Tip: Use freshly brewed coffee to achieve the best crema (foam). The CO2 in the coffee helps foam formation.
2

Fill the shaker to the brim with ice, then pour over the vodka, liqueur, sugar syrup, and finally the hot coffee.

Tip: Don't worry about the hot coffee: if you use enough ice, the temperature difference helps with dilution and rapid cooling.
3

Immediately seal and shake very hard and fast for 15-20 seconds.

Tip: The goal of shaking here is emulsification: foaming up the coffee oils with air. The harder you shake, the nicer and thicker the foam layer will be.
4

Strain through a fine strainer into the chilled glass, and garnish with the 3 coffee beans.

Tip: The strainer holds back ice shards, so the surface of the foam remains mirror-smooth.

Recipe FAQ

Why is there no foam on top?
You didn't shake hard enough! Forming the foam (crema) requires the physical force of ice cubes and mixing in air.
