Why has the sauce gone lumpy?
Tahini tends to seize up suddenly if it gets a little liquid. Add a bit more water and keep whisking persistently until it smooths out.
How long does it keep?
It can be consumed for 5-7 days if kept in a sealed jar in the fridge. If it thickens from the cold, loosen it up again with a little water.
