Esquites with feta cheese

Esquites is Mexico's answer to 'corn in a cup', but it is much more than that: a flavour bomb. While the original recipe uses Cotija cheese, this version works with the more easily obtainable salty feta cheese, which harmonises surprisingly well with the sweetcorn. It evokes the scent of steaming corn from street vendors' cauldrons, where smoky, salty, sour, and spicy flavours meet in a single spoon.

Heat the butter in a frying pan over a medium heat until it starts to foam. Toss in the corn and fry for 3-4 minutes until golden brown spots appear in places.

Tip: Frying caramelises the sugars in the corn, which gives a deeper flavour than if we just boiled it (Maillard reaction).

Pour in the milk and reduce the heat. Simmer for a few minutes until the liquid thickens and coats the kernels.

Tip: The fat in the milk and the starch in the corn form an emulsion, creating a creamy coating around the kernels.

Remove from the heat. Stir in the salt (carefully, as the feta is salty too!), the pepper, and the chilli powder.

Tip: It is worth mixing the spices into the fat so that the flavours dissolve better (fat-soluble flavour compounds).

Crumble in the feta cheese and squeeze over the lime juice. Toss together.

Tip: When acid (lime) and protein (cheese/milk) meet, be careful: do not boil further, as the milk may curdle.

Serve warm, sprinkled generously with fresh, chopped coriander.

Tip: Always add fresh herbs at the end so the heat doesn't kill their essential oils.

Can I use tinned sweetcorn?
Yes, but drain it thoroughly and fry it a little longer so the excess water evaporates, otherwise it will taste steamed instead of fried.
