Grilled tofu with roasted peanuts

The crunch of peanuts and the softness of tofu is a classic texture contrast. The oiliness and roasted flavour of the peanuts add depth to the dish, highlighted by the freshness of ginger and lime. This is a kind of "deconstructed" satay experience, where the elements of peanut sauce (peanuts, soy, lime, chilli) appear as distinct textures rather than a cream.

Instructions

1

Dice the tofu and thoroughly blot the moisture with kitchen paper.

Tip: A dry surface absorbs the marinade better.
2

Mix the marinade: soy sauce, grated ginger, crushed garlic, juice of half a lime, chilli powder, and half the oil. Toss the tofu in it for 15 minutes.

Tip: The acid (lime) and salt (soy) in the marinade start to "cook" the tofu, changing its texture.
3

Roughly chop the peanuts and toast briefly in a dry pan with the sesame seeds until fragrant. Set aside.

Tip: Toasting is important to release essential oils, but be careful not to burn them!
4

Heat the remaining oil in the frying pan. Fry the tofu (without the marinade) until crispy on all sides.

Tip: You can pour the remaining marinade over at the very end of cooking to glaze it.
5

To serve, sprinkle the tofu with the toasted peanut mixture and fresh coriander. Squeeze over the other half of the lime.

Tip: The fresh lime juice at the end "brightens" the heavy, nutty flavours.

Recipe FAQ

Peanuts or hazelnuts?
For this Asian flavour profile, unsalted roasted peanuts fit best, but it's also divine with cashews.
It turned out too salty.
Soy sauces vary in saltiness by brand. If this happens, you can correct the balance with a little extra lime juice or sugar.
