Hawaiian pizza

Although the name is exotic, this pizza was actually born in Canada in the 60s, in the golden age of flavour experimentation. The essence is the perfect balance of sweet and salty: the fruit sugar in the pineapple caramelises in the oven, which matches fantastically with the saltiness of cooked ham. One of the world's most divisive, yet most popular pizzas.

Preheat the oven to 220°C. Line a tray with paper.

Tip: Paper helps with cleaning, but the pizza bottom is crispier if placed directly on the (greased) tray.

Drain the pineapple in a sieve, then squeeze out excess juice with kitchen paper. Dice the ham or cut into strips.

Tip: This step is critical! Dry pineapple caramelises, wet just steams. [The Maillard reaction only starts above 140°C, in the presence of water temperature won't exceed 100°C.]

Stretch out the dough, place on the tray. Spread thinly with tomato sauce.

Tip: With Hawaiian pizza, the topping is the main event, the dough is just the vehicle.

Sprinkle with half the mozzarella. Distribute the ham and pineapple evenly over it.

Tip: If you put cheese under the ham, the edges of the ham brown nicely.

Sprinkle the remaining cheese on top to 'hold' the toppings.

Tip: The top cheese layer prevents the pineapple from drying out.

Drizzle the edge with olive oil.

Tip: Gives a nice shine and flavour to the dough.

Bake for 12-15 minutes until the cheese is runny and the pineapple edges start to brown.

Tip: The caramelised sugar on the pineapple gives the real taste experience.

Rest for a few minutes, then slice.

Tip: Careful, pineapple pieces stay hot inside for a long time!

Yes! Fresh pineapple is less sweet and crunchier, but fibrous. Cut it thinner.
