Hearty cabbage soup
Soup made from fresh head cabbage is a more rustic, sweeter version of vegetable soups. Unlike the sauerkraut version (Korhelyleves), here the natural sugar content of the cabbage dominates, balanced by the spiciness of caraway seeds and acidity of tomato. Light, yet filling, a true vitamin bomb for cooler days.

Instructions
Cut cabbage into finger-wide strips or squares. Clean and chop other vegetables.
Fry caraway seeds in oil for a few seconds until fragrant (popping). Add onion and sauté until translucent.
Throw in carrots and celeriac, fry together for 2-3 minutes.
Add cabbage, pepper, tomato. Pour over liquid.
Season with salt, pepper, bay leaf. Cook covered for approx. 25-30 mins until cabbage is soft.
Serve with sour cream and fresh bread.
