- The honey won't dissolve.
- In cold cider, honey sets. Always dissolve it first in a little lukewarm water or cider, then add to the icy drink.
Honey & blueberry cider cooler
The tannin content (astringency) of blueberries perfectly balances the sweetness of honey in this cocktail. Due to honey's viscosity, it dissolves poorly in cold liquid, so the 'pre-mix' technique (pre-mixing with a little liquid) is essential for a homogeneous drink. The result is an antioxidant-rich, beautiful purple refresher.

Instructions
1
✓
Put a few blueberries in the bottom of the glasses and press them slightly with a spoon or muddler.
Tip: This is 'muddling': it reveals the fruit flesh and releases its juice, colouring and flavouring the drink.
2
✓
In a small bowl, mix the honey with a little (approx 50ml) room temperature cider.
Tip: By reducing viscosity, the diluted honey will mix easily into the large volume of cold drink.
3
✓
Pour the honey base and remaining cider into the glasses over the ice.
Tip: Pour carefully so it doesn't foam over.
4
✓
Sprinkle in the remaining whole blueberries and orange zest.
Tip: The scent of orange zest adds freshness alongside the heavier, earthy blueberry.
