- Can I use 100% fruit juice?
- Yes, but the taste of freshly squeezed juice is incomparably more vivid. Carton juices are heat-treated, so their taste is 'flatter'.
- Won't it be bitter from the peel?
- Only if you cook the white pith in it or steep it for too long. Always use only the coloured zest!

Tip: The essential oils (limonene) in the peel provide the true citrus aroma, not the juice.

Tip: Do not boil, just heat to approx. 70-80°C to preserve the alcohol and vitamins.

Tip: Mint should not be cooked as it turns black and tastes 'wilted'. Steeping (infusion) in the hot liquid is just enough for it.
