This recipe is all about layering textures: crispy wafer slices hidden in an airy, creamy ice cream base, contrasted by a 'snappy' chocolate coating. The advantage of the homemade version is that you control the thickness of the coating, and by using condensed milk, you achieve a creamy consistency even without a machine (no-churn technique).

Whip the cold cream into soft peaks. Measure in the condensed milk, salt, and vanilla, then gently fold together.

Tip: The high sugar and solid content of condensed milk prevents ice crystal formation, so no cooking is required.

Crush most of the KitKat bars (leave some for decoration) and fold into the cream.

Tip: Don't crush it to dust; keep some enjoyable chunks in there!

Fill the moulds, insert the sticks, and freeze until rock hard (min. 4-5 hours).

Tip: It is important that it freezes completely, otherwise it will slide off the stick when dipped.

Melt the chocolate with the oil in a tall glass or jug (over steam or in the microwave). Cool back to room temperature.

Tip: If the chocolate is hot, it will melt the ice cream. It should be liquid but not warm!

Dip the frozen ice cream into the chocolate, lift it out, let it drip, and immediately sprinkle with the remaining crumbs.

Tip: The chocolate sets in seconds (to a hard snap), so be very quick!

Why do I need oil in the chocolate?
Pure chocolate would set too hard and thick on the ice-cold ice cream, shattering when bitten. The oil softens its structure, making it thinner and easier to bite.
