Margarita

The Margarita (Spanish for Daisy) is a descendant of the 'Daisy' cocktail family, where the base spirit is sweetened with citrus and liqueur. The earthy flavour of tequila, the sharp acidity of lime, and the salt crystals on the glass rim form a perfect trio. This isn't a sweet cocktail: it's a refreshing, acidic bomb.

Ingredients

Equipment Needed

  • Coupe glass: The wide-rimmed glass is ideal for salting.
  • Shaker: For cooling.

Instructions

1

Cut a wedge of lime and run it along half of the outer rim of the glass. Dip into salt.

Tip: Salt only the outer half so the salt doesn't fall into the drink, upsetting the flavour balance. And only half, so the guest can choose to drink with or without salt.
2

Fill the shaker with ice, add the tequila, liqueur, and lime juice.

Tip: Use 100% agave tequila, because 'cheap' tequilas (mixto) may contain additives that cause hangovers.
3

Shake vigorously for 15 seconds.

Tip: Shaking cools the drink to approx. -5°C, which dulls the harshness of the alcohol.
4

Strain into the glass (without ice).

Tip: The classic Margarita is served 'straight up', i.e., without ice, in a chilled glass.

Recipe FAQ

Why salt the rim?
Salt suppresses bitter flavours and enhances the sweetness and acidity of citrus (flavour enhancement).
