Mátra Style Potato-Crusted Pork

One of the most popular 'excesses' of Hungarian restaurants: schnitzel, but even richer. Although the original 'Mátrai' coating is made from potato pancake batter, this recipe presents the simpler, breaded version widespread among home cooks, crowned with the unmissable garlic sour cream. A real energy bomb!

Instructions

1

Pound the meat slices thin, then season with salt and pepper on both sides.

Tip: Pounding loosens the muscle fibres, making the meat more tender and ensuring it cooks through faster. (Mechanical tenderising)
2

Prepare the breading station: 1. Plate with flour, 2. Plate with beaten egg (with a pinch of salt), 3. Plate with breadcrumbs.

Tip: Beat the egg thoroughly so no stringy egg white pieces remain.
3

Dredge the meat in flour (shake off excess), dip in egg, then coat in breadcrumbs. Press the crumbs on slightly.

Tip: The flour serves as an 'adhesive bridge' between the meat and the egg.
4

Fry the meat in plenty of hot oil until golden brown (approx. 3-4 minutes per side). Drain on kitchen paper.

Tip: The oil is ready when a pinch of crumbs dropped in sizzles immediately. If the oil is cold, the coating absorbs it.
5

Crush the garlic and mix it into the sour cream (you can add a pinch of salt too).

Tip: Let it stand for 5 minutes so the garlic flavour permeates the sour cream.
6

Spread the garlic sour cream thickly over the hot fried meat and sprinkle generously with grated cheese.

Tip: The heat from the meat will melt the cheese slightly on top.

Recipe FAQ

Why doesn't the breading stick?
If the meat was wet or you didn't flour it thoroughly before the egg, the coating peels off during frying.
Can I add the cheese while cooking?
Yes, if you put the cooked meat into a hot oven for a few minutes with the cheese on top, it melts on and becomes even more delicious!
