The tannins of black tea provide a 'backbone' to the drink, upon which the deep taste of cocoa and fragrant oils of orange are built. This is not a thick hot chocolate, but an elegant, light, yet rich-tasting tea.

Boil the water, then wait a few minutes for it to cool back down to approx. 95°C.

Tip: Boiling water can 'burn' the tea leaves, making the drink bitter and astringent [Rapid tannin release].

Put the tea leaves and orange zest into the strainer or teapot. Mix the cocoa powder with the honey and a little hot water into a thick paste in a mug.

Tip: Cocoa powder wets with difficulty due to its fat content. If you make a paste first, you can avoid lumps [Dispersion].

Pour the hot water over the tea and let it steep for 3-5 minutes.

Tip: Steeping time determines the strength of caffeine and flavour compounds. After 5 minutes, bitter compounds dominate.

Strain the finished tea onto the cocoa paste and stir until smooth. Add a pinch of salt.

Tip: Salt suppresses the bitterness of cocoa and tea, so you will perceive the drink as sweeter.

Garnish with an orange slice and serve hot.

Tip: If you desire a richer taste, you can add a splash of milk or cream.

Recipe FAQ

Why didn't the cocoa powder dissolve?
Cocoa powder is hydrophobic (water-repelling), so it's hard to mix smoothly into water. Mixing it into a paste with a little honey helps it dissolve more easily.
