Heat the liquids (except the elderflower) and spices together.

Tip: The aroma of elderflower is heat-sensitive, so we add it at the end.

Simmer gently for 10 minutes, then remove from the heat.

Tip: The goal is for the flavours to meld.

Stir in the elderflower cordial and the honey.

Tip: Taste! You can still correct with water or honey if needed.

Tip: Do not leave the spices in, as they will overpower the drink over time.

Be careful with the amount of lemon juice; it should be dosed according to the sweetness of the elderflower cordial. Taste constantly!
