Simit is the rhythm of Istanbul's beating heart: scent of crispy rings sold from red carts is everywhere. This is not pretzel or bagel. Secret is 'pekmez' (grape molasses) bath dipped before baking. This sugary coating caramelises in oven, giving dark mahogany colour and unique slightly burnt-sweet taste, acting as 'glue' for millions of sesame seeds.

Instructions

Mix lukewarm water with sugar and yeast. Let rise 10 mins.

Tip: Foamy top indicates yeast ready to work.

Add flour, salt and oil. Knead into elastic dough (approx 10 mins).

Tip: Dough should be slightly harder than pizza dough to hold ring shape.

Prove covered 1 hour.

Tip: Process faster in warm place.

Divide into 8 parts. Roll each into two long strands, twist together spirally, then pinch ends to form ring.

Tip: Twisted shape increases surface area so more crispy bits.

Mix pekmez with water in deep plate. On another tray spread sesame seeds.

Tip: Pekmez solution should be dark and slightly thick.

Dip rings first in syrup then roll thoroughly in sesame seeds.

Tip: Don't spare seeds, Simit must be 'furred'.

Place on tray, rest 15 mins, bake at 200°C for 20-25 mins until dark golden brown.

Tip: Darker colour isn't burning but caramelised pekmez sign – gives the taste!

Recipe FAQ

Can I replace pekmez?
Use pomegranate syrup or dark molasses, worst case honey diluted with water, but taste will differ.
Why didn't sesame stick?
Water wasn't sticky enough (too dilute), or dough was too floury outside.
