Cut the chicken into thin strips. Mix with the olive oil and spices (garlic powder, paprika, oregano, chillies). Leave to marinate for 20 minutes.

Fry the potatoes in hot oil until golden brown.

Tip: Only put them in when the oil is hot.

In a hot frying pan with a little oil, fry the meat until red and crisp (approx. 6-8 minutes).

Tip: Don't overcrowd the pan, otherwise it will release juice. Better to fry in two batches.

Mix the tzatziki: yoghurt, crushed garlic, hot sauce, salt.

Tip: The fat in the yoghurt alleviates the chilli burn, but the hot sauce brings back the power.

The secret of street gyros is fatty meat and cooking in a tower. At home, thigh fillets give a juicier result than breast, so if possible, use that.
