- It became too spicy!
- The fat in the coconut milk and a little extra sugar help dampen the effect of capsaicin.
Spicy green curry sauce
Thai green curry (Gaeng Keow Wan) is the freshest and most fragrant of curries. Its colour comes from green chillies and herbs (coriander, Thai basil). The key to the recipe is 'cracking the coconut milk': the creamy milk is boiled with the paste until the oil separates – it is in this fragrant oil that the spices truly fry.

Instructions
1
✓
Grate the ginger and garlic. Heat a little sesame oil in the pan.
Tip: Sesame oil has a lower smoke point, so do not heat it too long on its own.
2
✓
Add the curry paste and fry for 1-2 minutes until fragrant.
Tip: Frying the paste is essential to 'activate' the flavours. Raw paste tastes flat.
3
✓
Pour in half of the coconut milk (the thick part). Cook until the oil starts to separate on top.
Tip: After the water evaporates, the paste continues to fry in the coconut oil, deepening the flavours.
4
✓
Pour in the remaining coconut milk. Season with fish sauce (instead of salt), sugar, lime juice, ginger, and garlic.
Tip: Fish sauce provides the umami bomb. Its distinct smell disappears during cooking, leaving only the taste.
5
✓
Simmer for a few minutes. Serve sprinkled with fresh coriander and sliced chilli.
Tip: Add the lime juice at the very end so the fresh acids don't cook away.
