Wash plums, stone and quarter them. Mix with sugar and cinnamon.

Tip: Sugar immediately starts drawing water from fruit, so mix just before filling, or let stand and pour off juice.

Dampen a tea towel and spread it out. Lay a pastry sheet on it, brush thinly with oil. Place 3 more sheets on top, brushing each.

Tip: Oil layer separates sheets, so they bake into crispy layers instead of forming a block. (Flaky structure)

Sprinkle bottom third of dough with half the breadcrumbs, then pile on half the plums.

Tip: Crumbs 'insulate' the dough from fruit juice.

Fold in sides, and use tea towel to roll up tightly. Repeat with remaining ingredients (makes two rolls).

Tip: Tea towel helps lift and roll thin pastry evenly without tearing.

Place on baking tray lined with baking paper, brush tops generously with oil/butter, and bake at 190°C for approx. 25-30 mins, until golden brown.

Tip: Fat on top helps browning and prevents drying out.
