Make the dough: activate the yeast in the lukewarm milk with a pinch of sugar. Knead together with the flour, sugar, salt, cardamom, and egg. Incorporate the soft butter at the end.

Tip: Cardamom and coffee make a surprisingly good pair.

Prove until doubled (approx. 1 hour). Shape into buns, prove again on the tray for 30 minutes.

Brush with egg and bake at 200°C for 10-12 minutes until golden brown. Cool completely.

For the cream, whip the cream with the icing sugar until stiff. Loosen the mascarpone, stir in the Amaretto, then fold into the whipped cream.

Tip: The fat content of mascarpone gives stability to the cream so it doesn't collapse.

Cut the tops off the buns. Brush the cut surface (the bottom part) generously with the cold espresso.

Tip: Like with sponge fingers: the dough soaks up the coffee, but don't drench it completely!

Pipe the cream generously (use a star nozzle). Place the hat on top.

Dust with cocoa powder before serving.

Tip: The bitter cocoa powder visually and tastefully evokes tiramisu.
