Vegan BBQ burger

The essence of BBQ is the marriage of smoke and sweetness. In this recipe, the BBQ sauce isn't just on top but inside the 'meat' patty too, caramelising as it cooks to add deep, complex flavours to the beans. Pre-frying the onions adds extra sweetness and softness to the mix.

Instructions

1

Chop the onion and fry in a little oil.

Tip: Fried onion is sweeter and less watery than raw, giving the patty a better texture.
2

Mash the beans, mix in the fried onion, oats, breadcrumbs, spices and BBQ sauce.

Tip: Don't blend completely smooth; a chunky texture is important.
3

Shape into patties and rest in the fridge for 30 minutes.

Tip: They are easier to handle when cold.
4

Fry in a pan until cooked.

Tip: They brown sooner due to the sugar content of the BBQ sauce, so be careful not to burn them!
5

Assemble the burger with extra BBQ sauce.

Recipe FAQ

The mixture is too soft.
It might be due to the moisture in the BBQ sauce. Add more breadcrumbs and let it sit in the fridge longer.
