Prepare and cook the chicken in the usual way (season, grill, melt cheese).

Tip: A stronger sear goes well with the chicken because of the juiciness of the mushrooms.

Clean the mushrooms (do not soak!), slice them. Fry in a hot pan with butter until golden brown.

Tip: Only salt at the end! Salt draws out moisture (osmosis); if you salt early, the mushrooms will boil in their own juice instead of frying.

Toast the buns. Spread with mayonnaise.

Tip: The fattiness of the mayonnaise carries the mushroom flavours well.

Pile the sautéed mushrooms on top of the cheesy meat.

Tip: Sinking into the cheese, the mushrooms won't fall off.

You put too many in the pan at once, or salted them too early. Mushrooms should be fried, not steamed.

Brown chestnut mushrooms are tastier, but porcini or chanterelles make it truly luxurious.
