- Can I bring it to a boil?
- Do not boil vigorously, as the alcohol (if present) will evaporate and the aromas may also be damaged. Just simmer it gently.
Cinnamon & honey cider
Hot cider is the cosy drink of autumn and winter evenings. The warm infusion of spices and the acidity of apple create a perfect balance. Unlike mulled wine, the lower alcohol content (or absence of it) provides a lighter, fruitier experience.

Instructions
1
✓
Pour the cider into a saucepan, add the spices (cinnamon, cloves, orange zest).
Tip: Use whole spices instead of ground, so the drink remains clear and no sediment forms at the bottom.
2
✓
Heat over medium heat until it starts to steam but does not boil. Keep at this temperature for 10 minutes.
Tip: This is the infusion period, when the flavours are released.
3
✓
Remove from the heat and only then stir in the honey.

4
✓
Strain into glasses, garnish with orange slices.
