Mix the flour, salt, and baking powder. Rub the cold butter into it.

Tip: Work quickly so the butter doesn't warm up from your hands.

Add the 150g of grated cheese and the sour cream, then knead the dough together.

Tip: If the dough doesn't come together, add a tiny bit more sour cream, but it shouldn't be sticky.

Roll the dough out into a rectangle, about half a centimetre thick.

Tip: Thin dough is the secret to a crispy result.

Brush the top with the beaten egg and sprinkle with the remaining grated cheese.

Tip: The egg acts as glue so the cheese doesn't fall off after baking.

Cut into long strips approx. 1.5 cm wide using a pastry wheel or knife.

Tip: You don't need to separate them before baking; they separate easily along the cut after baking, or move them to a baking tray one by one.

Bake in an oven preheated to 180°C until golden brown (approx. 15-20 minutes).

Tip: It's done when the cheese on top has browned nicely.

Why didn't it get crispy?
You left the dough too thick. Straws need to be thinner (0.5 cm) than scones.
What cheese should I use?
Any hard cheese is good (Cheddar, Gouda), but a little smoked cheese in the dough works wonders for the flavour.
