Æbleskiver (pronounced: eb-luh-skee-ver) is the Danes' brilliant answer to doughnuts and pancakes. Although the name means 'apple slices', the modern version rarely contains apple. The magic happens in the special pan full of indentations, where the batter bakes into spheres. Separate the eggs. Beat the egg whites to stiff peaks with a pinch of salt and set aside.

Tip: The air bubbles trapped in the egg whites will 'inflate' the batter during baking, making it light and airy.

In another bowl, mix the flour, sugar, baking powder, cardamom and salt with the egg yolks, milk, melted butter and vanilla until smooth.

Tip: Do not overmix, just until combined, otherwise the gluten in the flour will make the batter rubbery.

Gently fold the egg whites into the batter using a spatula.

Tip: Work with loose movements so as not to break the foam you worked so hard to beat.

Heat the Æbleskiver pan over medium heat. Put a tiny piece of butter in each depression.

Tip: The butter will sizzle immediately – this indicates the pan is hot enough.

Fill the depressions approx. 3/4 full with batter.

Tip: The batter will gain volume from the baking powder and foam, so don't fill to the brim.

When the edge starts to set (approx. 1-2 minutes), use a stick or knitting needle to turn the balls 90 degrees (onto their sides).

Tip: At this point, the raw batter flows out to the bottom of the depression – this will form the other half of the sphere.

Bake for another minute, then turn over completely so the sphere closes. Bake all sides until golden brown.

Tip: Continuous turning ensures an even spherical shape and internal cooking.

Serve warm, dusted with icing sugar and with raspberry jam.

Recipe FAQ

What do I do if I don't have a special pan?
Unfortunately, it is essential for the real spherical shape. In an emergency, you can bake small, puffy American pancakes from it in a plain frying pan, the taste will be the same, just the shape different.
Why is the middle raw?
The pan was too hot, so the outside burnt before the heat could reach the centre. Bake on a lower heat!
