Soak beans in water overnight (min. 12 hours). Rub the skins off under water and remove all skins.

Tip: Skinless beans are white and clean. This gives the creamy texture of the dough.

Put the drained beans and onion in a food processor. Blend until you get a smooth paste. If it really sticks, you can add a spoon of water, but do not dilute it!

Tip: The water in the onion is usually enough for blending.

Pour the mixture into a bowl, season with salt and pepper. Grab a wooden spoon and beat the dough with circular motions for 10-15 minutes until it increases in volume and becomes frothy.

Tip: This physical work replaces baking powder. The air bubbles make the acarajé light.

Heat the oil over a medium flame. Shape large quenelles with two spoons and fry until golden brown (approx. 5 minutes).

Tip: Do not overcrowd the pan so the oil temperature doesn't plummet.
