Although classic tiramisu is made with coffee, this fruity version celebrates spring freshness. The technique remains the same: the capillaries of the sponge absorb the flavoured liquid, softening but not disintegrating, while the richness of the mascarpone cream counterpoints the acidity of the fruit.

Whip the cold cream until stiff.

Tip: Cream only whips well when cold, because the fat globules are solid enough to hold the air bubbles mixed in.

Mix the mascarpone until smooth with the icing sugar and vanilla, then carefully fold in the whipped cream.

Tip: Don't use a machine to mix the mascarpone and cream, as the mascarpone can easily 'split' and become runny. Use a spatula!

Wash, hull, and slice the strawberries.

Tip: Always hull after washing, otherwise water gets inside the strawberry and dilutes the flavour (osmosis).

Dip the sponges momentarily in the orange juice (just enough to wet them!), then layer at the bottom of the bowl.

Tip: The sponge structure sucks itself full in seconds. If you soak too long, the result will be mushy.

Spread half the cream over, sprinkle with strawberries, then another layer of dipped sponge and the remaining cream.

Tip: Layering ensures every spoonful has every flavour and texture.

Refrigerate for at least 2 hours (but best overnight).

Tip: During resting, the moisture content of the sponge equalises, and flavours meld (diffusion).

Either you didn't whip the cream stiff enough, or you mixed the mascarpone for too long (in which case its structure collapses and becomes runny).
