Pico de Gallo, or 'rooster's beak', is an indispensable decoration on Mexican tables. This is not a cooked sauce, but a raw 'salad' where freshness rules. Preparation: Cut the tomatoes into small cubes. If very juicy, remove the seedy centre so it doesn't water down the salsa.

Tip: Use a serrated knife for tomatoes if your plain knife isn't sharp enough, so you don't squash the flesh.

Chopping: Finely chop the red onion, garlic, chilli and coriander.

Tip: The finer the onion and chilli, the better the flavour distribution, and no one bites into a large chunk of hot pepper.

Marinating: Place the onion and chilli in a bowl, squeeze over the lime juice and sprinkle with the salt. Let stand for 5 minutes.

Tip: This is the 'trick': the acid and salt take away the onion's raw, biting power and tame its flavour (maceration).

Assembly: Add the tomato, coriander and olive oil to the onion base. Toss gently.

Tip: Olive oil isn't traditional, but it helps carry the flavours and gives the salsa a little shine.

Resting: Refrigerate for at least 20 minutes to let the flavours meld.

Why did the salsa get watery?
Salt draws water out of vegetables. This is natural! Drain the liquid before serving, or dip it up with a tortilla – that's the tastiest part.
I don't like coriander, what can I substitute it with?
Many find it tastes like soap (genetics). Use parsley instead, although the flavour profile will be different.
