Good news: tacos are originally gluten-free! In Mexico, tortillas are traditionally made from corn flour (masa harina), not wheat. This recipe returns to roots, filling corn-scented sheets with light turkey meat. Healthy, colourful, and naturally free from gluten – provided we pay attention to the ingredients of spices and sauces too.

Fry the chopped onion in oil, then add the turkey meat. Fry until whitened and slightly browned.

Tip: Turkey tends to dry out, don't overcook it.

Stir in the spices, garlic and tomato purée. Pour a little (approx. 50ml) water underneath, and simmer together to get a juicy ragout.

Tip: The water helps the spices coat the meat and create a saucy consistency.

Prepare the toppings: dice the tomato, avocado, shred the lettuce.

Tip: Drizzle the avocado with lime immediately so it doesn't brown (oxidation).

The most important step: warm the tortillas in a hot, dry pan for 30 seconds on each side, until spots appear and it becomes flexible.

Tip: Keep them warm in a tea towel until serving.

Fill the sheets with the meat ragout, cheese and fresh vegetables.

Tip: Don't overfill, or it will spill out while eating!

The corn tortilla breaks, what's wrong?
Corn tortillas are stiff and brittle when cold due to starch recrystallisation (retrogradation). You must warm them through before eating!
Is the spice mix gluten-free?
Store-bought taco spice mixes often contain wheat flour as an anti-caking agent. Use your own spices according to the recipe!
