Knead together the potatoes, flour, and egg. Shape into gnocchi.

Tip: Work quickly so the dough doesn't get warm from your hands.

Cook in boiling salted water. Keep some of the cooking water!

Tip: The starchy cooking water thickens the sauce.

Toast the walnuts and sage in a little butter.

Tip: The sage becomes crispy in the butter.

Pour in the cream, melt in the goats' cheese. Toss the gnocchi in the sauce.

Tip: If too thick, loosen with the cooking water.
