Slice the tofu and press thoroughly with kitchen paper to remove moisture.

Tip: If you have time, weight it down for 15 minutes for a better texture.

Prepare the marinade: mix the soy sauce, grated ginger, crushed garlic, honey, and lime juice. Set half aside for dipping/dressing.

Tip: Honey helps with caramelisation but can burn easily, so pay attention while frying.

Toss the tofu in the remaining marinade and let stand for 15 minutes.

Tip: The salty marinade can draw water out of the tofu, so marinate immediately before cooking.

Heat the oil in a frying pan. Remove the tofu from the marinade (keep the liquid) and fry for 3-4 minutes on each side over medium heat until golden brown.

Tip: If you poured it in with the liquid, it would steam. Only put the tofu in the pan!

In the last minute of frying, pour over the marinade remaining in the bowl and let it glaze onto the tofu.

Tip: This is the "glazing" step, which makes it shiny and sticky.

Toast the sesame seeds in a dry pan. Serve sprinkled over the tofu, garnished with coriander, and offer the reserved fresh dressing on the side.

In this recipe, the juiciness and punch of fresh ginger are essential; the powdered version is too dull for this. Stick to fresh if possible!
