Honey & rum frappé

The secret to a perfect frappé is the foam, which is nothing more than air trapped in coffee. Although originally made from instant coffee for a longer-lasting foam, in the brewed coffee version, the density of honey and the cooling effect of ice help retain this special, creamy texture. The addition of rum adds an adult twist to the drink, loosening the structure and deepening the flavours.

Brew the coffee and whilst still warm stir in the honey and a pinch of salt, then cool completely.

Tip: In warm liquid, honey becomes runnier and dissolves immediately, so it doesn't stick to the bottom of the glass [Viscosity reduction].

Place the ice, cold milk, rum, and honey coffee into the blender.

Tip: Crushing the ice creates tiny crystals that thicken the drink and give structure to the foam [Physical texturing].

Blend slowly at first, then on the highest setting until the ice cubes disappear and a light brown, thick foam forms.

Tip: Fast mixing introduces a lot of air into the drink, making it feel creamy even without cream [Aeration].

Pour immediately into a highball glass and serve with a straw.

Tip: The foam is unstable; over time the liquid and air will separate, so it is most delicious when fresh [Phase separation].

Recipe FAQ

Why is honey or syrup better than granulated sugar in a cold drink?
Because granulated sugar dissolves very poorly in cold liquid and will crunch under your teeth. Honey is already liquid, so it mixes immediately.
The foam collapsed, what did I do wrong?
You might have added too much alcohol (rum), which destroys the foam structure, or you let the drink stand for too long.
