Mix the flour with the baking powder, then rub in the cold butter until crumbly.

Tip: It is important that the butter stays cold! The small pieces of butter create steam during baking, making the pastry crumbly.

Knead together with the sugar and 1 egg, then roll out into the baking tray.

Tip: Do not over-knead, as the heat of your hands will melt the butter, resulting in a tough, greasy dough.

Mix the curd cheese, sour cream, flavourings and the remaining egg, then spread over the dough.

Tip: The egg binds the curd cheese cream together during baking (heat coagulation).

Bake at 180°C (160°C Fan) until golden brown.

Tip: If the top is browning but the middle is still wobbly, cover with foil and bake a little longer.

Why is the pastry flat?
The baking powder was old. Always check the expiry date!
Why is the middle soggy?
The curd cheese was too wet. It's worth draining it before use, or mixing in a little semolina to absorb the moisture.
