Lebbencs soup is a brilliant invention of Hungarian shepherd life: simple, filling, and everything can be made in a single cauldron (or pot). The uniqueness of the dish is 'lebbencselés', i.e., toasting the pasta in fat. This step not only gives the soup a beautiful golden-brown colour but also a deep, roasted, nutty aroma that distinguishes it from simple potato soup.

Dice the bacon and render its fat in the pot until the cracklings are crispy. Remove the cracklings, leave the fat.

Tip: Start rendering fat on low heat so it doesn't burn, just releases the liquid fat.

Break the pasta into the hot fat and fry until dark golden brown, stirring constantly.

Tip: Toasting the pasta creates new flavour compounds, giving the soup character (Maillard reaction).

Add finely chopped onion to the pasta and sauté for a few minutes, then remove from heat and stir in paprika and crushed garlic.

Tip: Paprika dissolves best in fat, but be careful as it burns in seconds in hot fat and becomes bitter.

Pour in water, add diced potatoes (and whole tomato, pepper for flavour). Season with salt and pepper.

Tip: Pouring in cold water helps steam rise suddenly and prevents burning the paprika.

Cook over medium heat for approx. 20-25 minutes until potatoes and pasta are tender. Serve sprinkled with reserved bacon cracklings.

Tip: The starch content of the potato slightly thickens the soup, making it silkier.

Why did the soup turn cloudy?
If you boil it too vigorously, the potato breaks down and starch gets into the broth. Simmer gently!
Can I use other pasta?
Traditionally lebbencs pasta (flat pasta sheets broken up) is used, but in an emergency, large square pasta works too.
