Pour the cider into the saucepan. Add the cinnamon, cloves, orange slices, and freshly grated nutmeg.

Tip: Nutmeg aromas are volatile; fresh grating is much more intense than shop-bought powder.

Heat slowly to boiling point, but DO NOT boil! Keep simmering gently for 10-15 minutes.

Tip: Infusion accelerates with heat, but boiling would destroy the fresh fruity notes.

Remove from the hob and stir in the honey.

Tip: It's not good to boil honey as it loses its beneficial properties, so only add it at the end.

Strain into glasses and serve warm.
