- Minimum 70% dark chocolate. Milk chocolate is too sweet and lacks enough cocoa butter body.
- Won't it be too hot?
- The fat content of the chocolate and the sweetness dampen the chilli. Start with less and taste!
Red Wine Chocolate Chilli Sauce
Using chocolate in savoury dishes is an ancient tradition of Mexican 'mole' sauces. This recipe is not a dessert topping! The bitterness of high-cocoa dark chocolate and the tannins of red wine add incredible depth to beef, while the chilli causes a pleasant tingle. This is a 'grown-up' flavour profile, bold and unforgettable.

Sauté the garlic in the oil just until it starts to smell fragrant (do not brown!).
Tip: Building the base flavours starts here.

Pour in the wine and boil for 2 minutes to evaporate the alcohol.
Tip: After de-alcoholising, the flavour of the wine remains.

Stir in the cocoa powder, honey, and half the chilli powder. Simmer on a low heat for 5 minutes until it starts to become syrupy.
Tip: Cocoa powder deepens the colour and taste, and the honey caramelises.

Remove from the heat. Add the chopped chocolate and stir until melted and glossy.
Tip: Chocolate should not be boiled as it will split (become grainy). The residual heat of the sauce is enough to melt it.

Taste, season with salt and pepper, and if you can handle it, add the remaining chilli.
Tip: Salt is essential to bring out the flavour of the chocolate.
