- Won't it be too watery?
- The tea does dilute the kefir, so this will be a drinking yoghurt consistency. If you want it thicker, use strained Greek yoghurt as a base.
- How long does it keep?
- Since fresh tea oxidises, it's worth consuming within 24 hours, otherwise the taste changes and the colour starts to brown.
Refreshing green tea & mint kefir
Green tea kefir is a quick 'pseudo-fermented' drink where we mix ready-made milk kefir with strong tea infusion. This method gives instant results and combines the best of both worlds: the probiotics and proteins of kefir with the antioxidants of tea. With the addition of mint and lemon, a kind of 'creamy iced tea' is born, which is surprisingly refreshing on hot days.

Prepare the tea with 100ml of water and the tea leaves (steep for 3 minutes), then strain and cool until ice cold.
Tip: Tea made with little water gives a concentrated flavour without watering down the kefir too much.

Dissolve the honey and lemon juice in the cold tea, then pour into the kefir and whisk until smooth.
Tip: The acidic medium (kefir + lemon) helps stabilise the green tea antioxidants.

Tear the mint leaves into small pieces by hand and stir into the drink. Do not blend, so the liquid remains clear.
Tip: Tearing damages the leaf cell walls, releasing essential oils, but doesn't make it bitter like chopping.

Tip: The mint flavour strengthens as it stands.
