Prepare the batter: mix the dry ingredients. In another bowl, mix the egg yolks, buttermilk, melted butter and vanilla.

Tip: The acidity of the buttermilk reacts with the bicarbonate of soda, producing extra carbon dioxide – making it light as a feather.

Pour the liquid into the dry ingredients, mix until smooth. Finally, fold in the stiffly beaten egg whites.

Tip: Air bubbles are your friends, don't kill them with wild mixing!

Heat the pan, grease with butter. Fill the indentations halfway with batter. Immediately place a little almond or marzipan in the centre, then cover with a little batter.

Tip: 'Covering' helps keep the filling in the middle.

When the edges are firm, turn the spheres with the skewer. Cook until done.

Tip: Raw batter may still run out during turning, this is fine, in fact, this creates the spherical shape.
